Treats in late dinners

If anybody wants to try a real Pagricotto cheese or whey for sheep milk, he has to talk to a sheep farmer and order it. Ricotto cheese and whey are rarley put on to the market. While whey is findable in the stores, ricotto cheese is not. For it you have to go through a whole lot of trouble or be sure that the farmer will bring it from the farm. It is hard to say how much of ricotto cheese and whey is made on Pag, how much is is old or eaten. But it is sure that the quantity is small. There are 45.000 sheep on the isnad, from December until March, 20.000 lamb are born by some estimates. Some say about 20.000, but you can't find anywhere an exact number. But that i is even twice as much, say the sheep farmers of Pag, all of it would be gone, because the damnd is high. Pag should have at least 5 times the size to meet eh demand of only the home market. The yearly production is about 700 tons of cheese, and the biggest individual producer is „Paška sirana d.d.“ with 80 tons. „Paška sirana d.d.“ ragulary put ricotto cheese and whey in their stores. Older people say how you used to wait in lines for whey, how you would come with special bowls and wait until the sheep farmers would come from the hill. Then a still damp whey would be brought home and a whole family whould dig in. It was almost the same with ricotto cheese. It would usually be ordered, a farmer would bring it and then at dinner the whole family would enjoy. From ricotto cheese that would sit for for about one to two days, cakes would be made. They say how you would use the whole thing and not even leave crums, and that everything that is brought is eaten. It is interesting how ricotto cheese and whey are always connected with late dinners. The reason is simple. The sheep farmers would alway come back, just like today, from the farm when the day breaks. The ricotto cheese and whey from Pag are a feast and a reccomendation to all dairy product lovers. One problem is that the cheese and the lamb can be bought all over Croatia, but ricotto cheese and whey only in Pag. But to people who know what healthy food is, it is not hard...
